The quartering of a 170-kilo specimen in the third edition of Benidorm Bluefin Tuna Days

From May 12 to 21, thirteen restaurants will offer snacks, brochettes, dishes or tasting menus with bluefin as the main ingredient tuna

As a prelude to the imminent edition of the III Tuna Days, of Benidorm Gastronómico 2023 that begins tomorrow, On Friday, at Plaça del Castell in Benidorm the quartering of a  bluefin tuna caught early in the morning in Azohía took place.

The 'Almadraba' company, Atún Rojo Fuentes, a world leader company, Francisco Luengo explained the procedure of the blades in the process, a whole spectacle of cutting the tuna, quartering, learned from the Japanese culture and extracting up to 24 pieces.

After that, mayor Toni Pérez recalled Benidorm's trap fishing past, the tradition and entrepreneurship of the Fuentes family, and the experience of cutting blades, whom he congratulated for their experience and mastery.

Pérez recalled that the Benidorm fishermen used to fill the main traps of the Mediterranean and the Atlantic, pointing out that in Benidorm, which we know about tuna and the art of its capture, we are now going to mark an event in gastronomy.

For the mayor, participating in these Days means adding assets to Benidorm and making the city's offer more attractive, while paying tribute to the seafaring and tuna fishing past. Pérez finally congratulated the 13 participating establishments and encouraged them to participate in this gastronomic event very much in tune with the spirit of Benidorm, associating the Benidorm brand with bluefin tuna.

The 'Gastronomic Benidorm' will celebrate the third Tuna Days from May 12 to 11, the second activity of the gastronomic calendar of local events organized by the Association of Bars, Restaurants, and Cafeterias of Benidorm, Abreca, whose president Javier del Castillo has opened the act, and the City Council of Benidorm.

The participating establishments are Belvedere Restaurant, Edén Restaurant, El Mesón Brewery, El Puerto Seafood Restaurant, El Esturión Restaurant, La Arrocería de la Mejillonera, La Brasería, and La Tapería Aurrerá, La Cava Aragonesa, Malaspina Restaurant, Molta Pasta Restaurant, Pinocchio Playa Restaurant and Wine On Wine Bar Restaurant.
